 Citrus and Corn.
45ml Nikka Coffey Grain Whisky
Strangelove Mandarin Soda
Fee Bros Orange Bitters
Build in a highball glass over ice, add bitters to top. Garnish with either an orange or grapefruit slice.

 The Oakdrop.
45ml Nikka Coffey Malt Whisky
45ml Amaro
Add ingredients and ice to mixing glass, stir for 15 seconds. Single strain over ice, garnish with a fresh cherry.

 

 Nikka Gimlet.
45ml Nikka Coffey Gin
15ml Fresh Lime Juice
10ml Simple Sugar Syrup (1:1)
method: Add all ingredients to shaker and shake hard over ice, double strain into coupe glass. Can be served with a lime twist.

 Nikka Coffee Martini.
60ml Mr Blacks Coffee Liqueur
45ml Nikka Coffey Vodka
15ml Bitter Truth Apricot Liqueur
2 Dashs Bitter End Mexican Mole Bitters
3 Drops 'Wonder Foam'
Add all ingredients to shaker with ice, shake hard for 20 seconds. Single Strain into martini glass, garnish with coffee beans.

 Dry Martini.
5 parts Dry Gin
1 part Dry Vermouth - we used Dolin Dry, Noilly Prat Original Dry and Lillet in different cocktails.
Stir with ice in a mixing glass and serve in a pre-chilled glass.

 Dirty Martini.
50 ml Okinawa Japanese Gin - very suited to this drink
25ml Dry Vermouth - of your choice
25ml Green Olive Brine
Stir with ice in a mixing glass and serve in a pre-chilled glass.

 Wet Martini.
60ml Pickerings 1947 Gin - this gin features cardamon and anise among other spices
30ml Dry Vermouth of your liking. We used the fruity Lillet.

 Alaska.
Not really a martini, but a strong and bold close relative.
5 parts high alcohol Gin - We used Karu Lightning Gin 57.5% alc
1 part Yellow Chartreuse
1 dash of Orange Bitters
Stir with ice in a mixing glass. The longer the stir the more diluted. Pour into a pre-chilled glass.

 Pie Father.
60ml Rye Bourbon
30ml Moreau Apple Pie Liqueur
Pour both into a short glass, add ice and stir. Peel a strip of orange rind and twist it over the glass, then add to the drink.

 Coconut Daiquiri.
30ml Bati Coconut Rum
Liqueur
45ml Bati White Rum
15ml Fresh Lime Juice.

Build on ice and shake, then strain into a cocktail glass and garnish with a lime wedge.

 Fijian Punch.
30ml Bati Dark Rum
30ml Bati White Rum
15ml Bati Coconut Rum Liqueur
40ml Pineapple Juice
20ml Fresh Lime Juice
10ml Sugar Syrup 1:1

Build on ice and shake. Strain into an ice filled highball glass and garnish with a pineapple leaf.

 Ratu Signature on the Rocks.
60ml Ratu Signature Rum
Pour over large ice cubes in a short glass. Garnish with orange peel and a cinnamon quill.

 The Mojito.
30ml Monin Mojito Mix
60ml Spanish Rum
Soda to top
Build on ice in a glass. Briefly stir to combine and garnish with mint.

 Piña Colada.
30ml Monin Piña Colad Mix
60ml Spanish Rum
Dairy optional
Pour all into a glass on ice or into a blender for frozen Piña Colada. Garnish with tropical fruit.

 A Gimlet.
50ml Dry gin
20ml Monin Lime Rantcho
20ml Monin Pure Cane Sugar Syrup
Add all ingredients to shaker over ice and shake hard. Fine strain into a glass.

 Diablo Tropical Mojito.
30ml Black Cockatoo Coconut Rum
30ml Big Pineapple Liqueur
3 Fresh Squeezed Lime Wedges
15ml Fresh Lime Juice extra
6 Clapped Fresh Mint Leaves
20ml Pineapple Juice
Fresh Passionfruit Pulp
Diablo Ginger Beer
In a hurricane or tall glass add rum, liqueur and juices with lime wedges and mint. Fill with ice and top with Ginger Beer. Drizzle with passionfruit pulp. Garnish with a sprig of mint and dehydrated pineapple wedge.

 Eros Espresso Martini.
30ml Eros Original Vodka
45ml Pegasus Espresso Martini Liqueur
45ml Golden Apple Cold Press Coffee
Add all ingredients over ice to a cocktail shaker. Shake hard and double strain into a martini glass. Garnish with three coffee beans.

 Popsicle Martini.
30ml Eros Original Vodka
30ml Hedone Banana Liqueur
15ml Pegasus Espresso Martini Liqueur
45ml Cream or Milk
Add all ingredients to a shaker and fill with ice. Shake hard and single strain into a short glass over ice. Dust with cocolate powder.

 Oasis Colada.
30ml Black Cockatoo Chilli Spiced Rum
30ml Black Cockatoo Coconut Rum
30ml Big Pineapple Liqueur
45ml Pineapple Juice
Add all ingredients to a Boston shaker, fill with ice and shake hard. Single strain into a short glass over ice. Garnish with a pineapple leaf, dehydrated pineapple wedge or lime wheel.

 38 Special Bloody Mary.
60ml 38 Special Vodka
90ml Tomato Juice
30ml Fresh Lemon Juice
15ml Worcestershire Sauce
15ml Olive Brine
3 Dashes Tabasco Sauce
Cracked Black Pepper to taste
Pour all over ice into a tall glass and stir.

 Blueberry Pie Sour.
60ml Moreau Apple Pie Liqueur
30ml Fresh Lemon Juice
6-8 Fresh Blueberries
Add all ingredients to a cocktail shaker with ice and shake. Strain into a chilled cocktail coupe.

 38 Special Vodka Dry Martini.
60ml 38 Special Vodka
15ml Dry Vermouth
Stir well over ice and strain into a chilled martini glass. Garnish with a lemon twist.

 Blueberry Gin Sour.
40ml Signature Gin
20ml Limoncello
25ml Fresh Lime Juice
20ml Blueberry Syrup
Shake and strain into a chilled cocktail glass.

 Black Cardamom Gin Negroni.
30ml Citrus and Black Cardamom Gin
30ml Campari
30ml Sweet Vermouth
Stir over ice in a chilled rocks glass and garnish with an orange wedge.

 2204 Marrickville Gin Dirty Martini.
60ml Marrickville Dry Gin
15ml Olive Brine
10 Dry Vermouth
Stir well over ice and strain into a chilled martini glass. Garnish with 3 olives.

 Penicillin.
45ml Benriach The Original Ten
15ml Benriach The Smoky Ten
20ml Fresh Lemon Juice
20ml Honey-Ginger Syrup
Lemon and Glace Ginger to garnish
Combine the liquids in a shaker, add ice and shake well. Strain into an ice-filled short glass and garnish with the lemon and ginger.

 Blood and Sand.
25ml Benriach The Original Ten
25ml Cherry Liqueur
25ml Sweet Vermouth
25ml Fresh Orange Juice
Combine all in a shaker with ice and shake. Strain into a glass and add Orange Peel to garnish.

 Benriach Whisky Sour.
50ml Beenriach The Smoky Twelve
20ml Fresh Lemon Juice
15ml Egg White or alternative
15ml Almond Syrup
Add all ingredients to a shaker and fill with ice. Shake and strain into an ice filled short glass.

Rob Roy.
50ml Benriach The Twelve
25ml Sweet Vermouth
2 Dashes Angostura Bitters
Add liquids to a mixing glass and add ice. Stir until chilled and strain into a glass. Garnish with an orange peel or fresh cherry.

 Boulevardier.
30ml Benriach The Twelve
20ml Sweet Vermouth
20ml Campari
Pour ingredients over ice into a mixing glass, stir until chilled and strain over one large ice block into a short glass. Garnish with a piece of orange peel.

 Hinch Tipperary.
50ml Hinch 10yo Irish Whiskey
25ml Sweet Vermouth
10ml Green Chartreuse
2 dashes Angostura Bitters
Pour all ingredients over ice into a mixing glass and stir until well chilled. Strain into a short glass over ice and garnish with a twist of orange rind.

 Hinch Old Fashioned.
50ml Hinch 5yo Double Wood Irish Whiskey
10ml Rich Demerara Syrup 2:1 - we used CSR Dark Brown Sugar
2 Dashes Angostura Bitters
2 Dashes Orange Bitters - we used Regan's
Pour all ingredients over ice into a mixing glass and stir until well chilled. Strain into a short glass over ice and garnish with a twist of orange rind.

 Osmoz Dry Martini.
50ml Osmoz Citrus Gin
10ml Lillet Blanc
Stir with ice in a mixing glass. Strain into a glass and garnish with a Green Olive.

 French 75.
30ml Osmoz Classic Gin
15ml Sugar Syrup 1:1
10ml Champagne or sparkling wine
15ml Fresh Lemon Juice
Pour all ingredients into a shaker and half fill with ice cubes. Shake for about 10-15 seconds and strain into cocktail glass. Garnish with lemon peel and a glae cherry.

 Panarea Island Gimlet.
50ml Panarea Island Gin
25ml Bickfords Lime Juice Cordial

10ml Fresh Lime Juice
Shake all ingredients with ice and strain into a cocktail glass.

 Panarea Sunset White Lady.
45ml Panarea Sunset Gin
30ml Fresh Lemon Juice
15ml Sugar Syrup 1:1
20ml egg white or alternative
Shake with ice and strain into cocktail glass.

 Butterscotch Rum Old Fashioned.
20ml Vok Butterscotch Liqueur
40ml Beenleigh Double Cask Rum
2 dashes Regan's Orange Bitters
Stir in a mixing glass with ice and strain into a short glass.

 23rd Street Violet Lychee Martini.
30ml Violet
20ml Vok Lychee Liqueur
10ml Simple Syrup 1:1
20ml Lime Juice
Shake with ice and serve with a skewered lychee garnish.

 Lemon Meringue Pie.
50 Limoncello
45ml Lemon Juice
15ml-20ml Rich Sugar Syrup 2:1
15ml egg white
1 Teaspoon Hazelnut Liqueur.

 Grasshopper.
30ml Green Creme de Menthe Liqueur
30ml White Creme de Cacao Liqueur
30ml Fresh Pouring Cream
Shake all ingredients with ice and strain. Garnish with a crumbled Flake chocolate.

 Toblerone.
30ml Brandy
15ml Butterscotch Liqueur
15ml Dark Creme de Cacao
30ml Fresh Pouring Cream
Shake all ingredients with ice and strain into a glass.

 Jaffa Ginger.
60ml Stiffys Jaffa Vodka
30ml King's Ginger Liqueur
Shake both ingredients with ice and strain into a glass

 Raspberry Delight.
20ml Vodka
20ml Fresh Lemon Juice
20ml Creme de Cacao White Liqueur
20ml Raspberry Liqueur - we used Chambord
Shake all ingredients with ice and strain into a glass.
