A quality agave spirit produced with the best of everything:
100%, first growth, blue agave from Jalisco were cold pressed to extract the juice and this was then enzymatically hydrolised (as opposed to fermenting with yeast) to result in much less methanol (the poisonous part of alcohol) than regular agave fermentation. The agave wine was distilled into spirit using an Alembic / pot still to retain maximum flavour. The Anejo's spirit was then aged in toasted, virgin American oak barrels (not ex-bourbon barrels).
The flavour has medium toasty oak influence in balance with fresh and clean agave flavours. This is definitely one for sipping to enjoy the complexity.
